Grandma Sylvia’s Carrot Ring

  • 1 cup (not quite) Crisco
  • 1/2 cup brown sugar
  • 1 TB water
  • 1/2 tsp baking soda
  • 1 egg
  • 1 cup grated carrots
  • 2 tsp lemon juice
  • 1/2 tsp salt
  • 1-1/4 cup flour
  • 1 tsp baking powder

Dissolve baking soda in water. Combine all ingredients in a large bowl and put into a 4 cup greased ring mold. Bake at 350 for 30-45 minutes. For 6-1/2 cup ring – do 1-1/2 times recipe.

To serve, turn over onto platter and surround with green beans.

    Jody! Thanks for posting this!! (Great)Aunt Sylvia’s carrot ring was my ABSOLUTE favorite thing growing up, I obsessed over it, seriously! I am totally going to make this for thanksgiving, of course I am going to try it gluten & dairy free (blasphemous, i know, but i gotta…), hopefully it will hold up. xoxo
